This is the bread we make with a bread maker. We get nine slices of toast size bread with only 5 grams of net carbs.
3 tsp. sure bake yeast (red Lid)
Half tsp sugar *
300mls luke warm water (distilled is best)
3 tblsp olive oil
one and a half tsp baking powder
1 tsp salt
1 tblsp Natvia (no carbs)
1 cup gluten flour (compressed)
quarter cup oat flour
three quarters cup soy flour
quarter cup flax seed meal (ground linseed)
quarter cup wheat bran
Pour yeast into bottom of bread machine. Add sugar and water, stir and sit for 20 minutes. If there is no bubbling then the yeast is dead. Start again with new yeast.
Mix all dry ingredients together in a bowl till no lumps.
Add oil to machine pan then add dry ingredients. Set machine to basic cycle and bake (3 to4 hours)
*The sugar is totally consumed by the yeast and does not contribute to the carb count.
Tips:
All measurements have to be exact, use proper measuring cups and spoons
You can get all ingredient from Countdown apart from the soy flour which is available from Bin Inn.
If you get a very small loaf it will almost always be the yeast, try and get the longest useby date. We have had yeast that was no good even before expiry date.
You will find the bread will be too fresh to cut till the next day and you can freeze slices between baking paper plus the loaf stays fresh for ages in a cool cupboard.
