The perfect keto breakfast, this easy snack is low carb and high fat,making it a great keto snack.
Ingredients:
* 2 cups of mixed nuts and seeds, we use almond, walnuts, pumpkin seeds and sunflower seeds.
* Half a cup of decicated coconut.
*1 tblsp of chia seeds.
*Quarter tsp of salt.
*2 tblsp of coconut oil or butter.
* 1 tsp of vanilla essence.
*Quarter cup of molasses.
* Third of a cup of chunky peanut butter.
Instructions:
1, Line a 20cm square baking tin with baking paper.
2, Roughly chop the larger nuts. You can leave them whole but will make the bar crumble.
3, Combine the nuts in a large bowl with the decicated coconut, chia seeds and salt.
4, In a small microwave proof bowl add the coconut oil, vanilla, molasses and peanut butter.
5, Micro wave the oil mixture for approx. 30 seconds or combines easily, stir thoroughly to evenly mix.
6, Pour melted mixture over the nuts and seeds then stir to mix.
7, Press into the baking tin evenly.
8, Freeze for one hour before cutting into strips, keep in fridge or freezer.
