CHOCOLATE ZUCCHINI MUFFINS

Dry Ingredients:
*Three quarter of a cup of coconut flour.
*Half a cup of Natvia sugar.
*Quarter of a cup of Cacao choclate powder.
*One Tblsp of baking powder.
*One Tsp of coffee.
*Quarter of a Tsp of xanthan gum.
*Quarter Tsp of salt.

Other ingredients
*One medium Zucchini.
*200 grams of Healtheries sugar free baking dark chocolate.
*115 grams of butter.

Melt together.
*115 grams of butter.
*40 grams Healtheries sugar free baking dark chocolate.

Wet Ingredients.
*6 large eggs.
*One Tsp of Heilala vanilla extract.
*Half a Tsp of sugromax liquid sweetener.

Instructions:
1,Preheat oven to 180 degrees C and position rack in middle of oven.
Spray 12 wells on muffin tray with baking spray.

2,Grate zucchini, place into a colander and sprinkle with a little sea salt. Mix thoroughly and let sit.

3,Place dry ingredients into a medium bowl and wisk together breaking up any lumps.

4,In a seperate bowl Beat eggs,sugromax,vanilla,melted butter and chocolate mix together.

5,With beater on low slowly add the the dry ingredients into the egg mix.

6,In a small bowl hand mix together the squeezed out zucchini and the remaining 160 grams of chocolate.

7,Hand mix the zucchini into the egg mix.

8,Cook for 25 minutes

Devide into muffin wells evenly.

Has 3.3 grams of net carbs and 169 calories
